Buckwheat is a plant cultivated for it’s grain like seeds, although it’s not related to wheat. In the same family as sorrel and rhubarb, it produces nutrient packed seeds – known as ‘groats’ – that are high in protein, complex carbohydrates and anti-oxidants.

Ingredients
- 2 cups raw buckwheat groats (soaked in water for minimum of 1 hour or overnight)
- 1 ¼ cups almond milk
- 2 tbsp chia seeds
- ¼ cup honey or maple syrup, or to taste
- pinch of salt
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- Mixed frozen berries
Method
- In a bowl, pour 2 cups of raw buckwheat groats and 4 cups of water.
- Soak for at least 1 hour or overnight. After soaking, rinse well in a strainer several times.
- Place buckwheat groats in food processor or blender, along with the almond milk, chia seeds, and vanilla. Process until combined and slightly smooth.
- Heat in the food processor, or in a pan on the stove, until piping hot.
- Now add in the sweetener and cinnamon to taste.
- Top with a handful of blueberries, strawberries, raspberries (optional) and serve immediately.
